Chinese White Sauce Recipe


Ingredients:
¾ cup chicken broth
2½ tbsp Shao Hsing wine (Shaoxing)
1 tbsp soy sauce
½ tbsp sugar – you can use a bit more if you wish
2 tsp cornstarch – mixed with a little water to dissolve

To Use this Sauce in a Stir Fry:
Simply mix everything except for the cornstarch in a large cup. In a smaller cut mix the cornstarch with a little water until it dissolves. Add the sauce once the aromatics, meat, and vegetables are cooked. Then just as the sauce starts to boil, add the cornstarch mixture and stir until the sauce thickens.

To Use this Sauce as a Dipping or Pouring Sauce: (Sauce on the Side)
First mix everything except for the cornstarch in a large cup. In a smaller cut mix the cornstarch with a little water until it dissolves. Then stir fry the following for 30 to 40 seconds:
1/8 piece of fresh ginger - minced
1 green onion – white part only - minced
¼ clove of garlic – minced
Next, add the sauce and bring it to a boil. As the sauce starts to boil, add the cornstarch mixture and stir until the sauce thickens.
